Been mixing it up in the kitchen lately -- here's what I've been eating:
Kate's Summer Salad (serves 1)
1 c. greens (we're using iceberg, since that's what Stu likes, but I prefer a Spring Mix)
1/2 small apple (Gala, Fuji or Pink Lady), chopped
1/2 English Cucumber (or 1/3 of a big cucumber), sliced
1 tbsp. nut-and-dried-fruit mix (Walmart has a small pack of soy nuts, dried dates and cranberries for $1)
1 tsp. vinaigrette (I use Italian)
Toss together. Enjoy. It's a perfect summer lunch/dinner side -- tangy, fresh and beautiful.
Kate's New Favorite Sandwich:
2 slices bread (12-grain or Honey Wheat)
1 tsp hummus (I use the garlic-and-pepper version)
1 leaf lettuce
3 slices white sandwich meat (I use chicken but turkey works too -- roast beef would also work)
a dash of pepper
a few sprinkles of Italian seasoning
Toast the bread and then spread the hummus. Place the lettuce on top and then the meat. Sprinkle on the seasoning and pepper. Cut diagonally and enjoy.
I would pair this with a cup of tomato soup, some crunchy vegetables or pretzels, or a nice, cold root beer.
Both of those sound delicious (I guess I'd forgeo the meat on the hummus sandwich though. The Italian seasoning sounds really good!).
ReplyDeleteAs for Iceburg, you should slowly start mixing romaine in with it...I doubt Stu would notice. ;-)

ReplyDeleteI think the hummus sandwich would be just as yummy sans meat -- maybe add in a slice of cheese substitute? Or you could just put in cucumbers, mushrooms and onions. Mmmm!
